Craft Cocktail and American Cuisine

As a main tourist attraction in the city of Chattanooga, the historic ‘Choo Choo’ represented a design challenge of melding renovation and innovation. For many years this corner site of the 130-year-old Beaux Arts building sat in disrepair. Design inspiration was drawn from the space itself, highlighting moments in the building’s history. Rather than a restoration to it’s former appearance, we chose to showcase the historic structure and its real patina of time. The intricate wood roof framing was and modelled wall plaster finish was exposed. Embracing this, the design added rustic plank flooring, period tile work and an exposed HVAC system. The original arched windows and doors were restored with new, folding windows added at the back bar to open to the new exterior dining spaces. Lighting and furniture were selected to bridge the historic character with the new, hip craft cocktail modern chef-driven operation.
